Easy One Pan Chicken and Veggies

Am I the only one who thinks the weekends are over before they even start? I feel like I am scrambling on Sunday evening to get everything ready for the busy week ahead. This is one of our favorite easy, affordable recipes that takes just minutes to prepare and toss in the oven. I was lucky enough to get chicken legs for 89 cents a pound and an eight pound bag of potatoes for 99 cents. This made this meal very affordable.

All you need is chicken thighs and/or legs (You can use breasts too, I have)
Potatoes, chopped
green beans (fresh, frozen, or canned) I have used all three kinds
Butter (Or olive oil)
Seasonings – We personally like garlic powder, Italian season, onion powder, and parsley.
* Sometimes I sprinkle  a little lemon pepper on the chicken.
** I have also used ranch packets and Italian packets, if they are on hand.

Put it all in a baking dish, cover with butter ( You can melt it or just put little slabs all over)
Sprinkle on your seasonings
Bake at 400 degree F  for about an hour. I usually stir the potatoes about half way through

This is a picture of one pan when it was finished. My family had already dug into the other one and finished it off!

This recipe is very affordable as well!

3.22 pounds of chicken legs – $2.87
4 pounds of potatoes – $.50 (I made a couple baked potatoes for my picky daughter)
2 cans of green beans – $1.38  ($.69 each)
1 stick of butter – $.23
Seasoned with onion powder, garlic powder, Italian seasons, and parsley. I did not do the math for the exact cost of seasonings. I usually buy them in bulk.

This filled 2 9×13 glass baking dishes.

I spent $4.98 plus the cost of seasonings to feed my family of five tonight, without a lot of effort!

Clean up is also a breeze with no extra prep dishes!
