This muffin recipe is an easy time and money saver! This muffin recipe makes 24 muffins. You can throw in fresh fruit. I have used blueberries, strawberries, and raspberries. Once the batter is ready, just split it into separate bowls and throw whatever fresh fruit you like.
Today, I made blueberry and strawberry muffins. Boy, are the yummy!
Ingredients:
3 cups flour
1 3/4 cups sugar
2Tbsp cinnamon (We like a lot of cinnamon)
2 tsp baking powder
1/2 tsp salt
1/2 tsp baking soda
2 eggs
1 1/4 cups milk
1 cup melted butter
2 cups fresh fruit, divided
Directions:
Preheat oven to 375 degrees Fahrenheit.
Line muffin pan with paper liners or grease cups
In a large mixing bowl, combine dry ingredients
Melt butter. 30-50 seconds in the microwave, stirring every 10-20 seconds
Add milk and eggs to melted butter; beat
Stir butter mix into the dry ingredients until moist.
Split batter into separate bowls for different fruits (If using just one fruit, skip this step)
Stir in fruits
Put in muffin pan
Bake 17-20 minutes. Muffins are done when a toothpick stuck in the middle of muffins comes out clean.
Let cool 5-7 minutes before removing from pan
Store in air tight container.
